Chicken Cacciatore
Hunter-style chicken without the usual onion-and-pour-the-oil treatment. Tomatoes, mushrooms, and peppers carry the sauce. Onion is out on the Optimal Weight Plans; use leeks or green onions in its place.
Ingredients
- 12 oz skinless chicken breast (white meat)
- 1 cup sliced mushrooms
- 1 cup chopped bell peppers
- ½ cup petite diced tomatoes (1 Green; puree if you want a smoother sauce)
- ½ cup sliced leeks or green onions (in place of ½ cup onion = 1 Green)
- 2 tsp olive oil, measured (healthy fat — do not pour freely)
- Garlic, dried oregano, basil, salt, and pepper (condiments — stay within your condiment count)
- Splash of red wine vinegar or water if the pan needs loosening
Method
- Season the chicken. Heat 1 tsp oil in a skillet and brown the breast on both sides. Set aside.
- Add the remaining 1 tsp oil. Cook mushrooms, peppers, and leeks or green onions until they soften.
- Stir in petite diced tomatoes (or puree them first), herbs, and garlic. Nest the chicken back in. Cover and simmer until the chicken is cooked through.
- Split the pan into 2 plates. Each plate is one Lean & Green.
Count the whole recipe, then divide by 2. Chicken is the lean. Mushrooms, peppers, tomatoes, and leeks/green onions are the greens. Oil is the fat.
